    What was the tastiest meatless or vegan meal you ever had or had recently? Did you make it? Can you share a recipe?

    Guacamole and tortilla chips are vegan and that's basically the best food ever. There are so many great meatless/vegan foods, though. My husband and I used to make a delicious vegan pizza using Follow Your Heart "mozzarella" shreds [before I was diagnosed with celiac :( ] 
    HIGHLY recommend the Vegan For Everybody cookbook by America's Test Kitchen.

      Emily, thanks for the cookbook recommendation! I hadn't heard of Vegan For Everybody, and I'm very interested in expanding my vegan cooking skills.

    How did you figure out ways to remove foods that are not forest-friendly?

    A few ways to be a more forest-friendly consumer are: reduce or eliminate meat (esp. beef) from your diet, buy locally-grown produce,  and look for labels like Rainforest Alliance Certified and FSC certified (though these orgs aren't perfect, they're a step in the right direction).

    The vast majority of my water footprint comes from the food I eat and the stuff I buy. I try to only buy things that I need or really want - one silver lining to living in a small apartment is that it can only hold so much stuff, and I hate clutter! I also love to shop second-hand.
