    Canning and pickling food is a great way to have delicious summer fruits and vegetables all year round. Just make sure to follow the canning and pickling guidelines from the USDA or another trusted source. What are some foods that you would like to preserve and enjoy later in the year?

    I used an instant pot and made some lentil soup with ham, and vegetables.  It is nice to be able to freeze portions and have soup whenever I feel like it.   Yay!  It is that time of year for soups!

    The biggest benefit of forgiveness for me is the peace that follows. And not being able to forgive can also lead to all kinds of health issues.  It isn't always easy, but it seems it is always better in the long run for everyone.  :)

    Fall is my favorite time of year, so I appreciate walking out in the neighborhood because of all the beautiful bright-red and orange leaves that brighten up all the landscape.

    How does food sovereignty address the complex transition from localized food systems to modern global food systems?

    Regaining Food Sovereignty is definitely a worthwhile documentary to see.  Random Thoughts:  We are more unique than we are different-- I liked that quote, and we certainly have a lot to learn from each other.  So nice to know they are working to build a healthier community for current and future generations by working with their people and other native communities.  It would be great to grow our own fruits and veggies, rice, eat fresh fish, etc.  All of this fresh food is certainly better than any of the processed food that we eat.  Hard to see the dead buffalo, but beautiful to see the ceremony they had that honors it for its sacrifice.  Made me think a lot more about what I need to eat to be healthy.  Really enjoyed seeing part of their journey.

    I am consciously turning off lights, using cold water, and focusing on being present out in nature.  In addition to that, I am carving out time for myself with the exercise and mindfulness activities and those health and wellness aspects are wonderful side benefits of this echochallenge. These practices are inspiring me to continue to do these actions regularly after the challenge.

    I enjoyed some peaceful minutes outside observing a beautiful fairly- warm morning sipping coffee watching a cat skip along the top of a fence and relished in the quiet start of the day.
