    I'm having a rough health day, but I managed to do my 5 minutes exercise and ate my tomato sandwich. I can't do much, but I did my eco-challenge goals!

    Guys. I've eaten a tomato sandwich for lunch everyday and called it my serving of fruit. There is always a way to achieve your goal that will work for you!

    Stay strong through the finish, guys! We're almost through People's EcoChallenge!

    I'm really, really proud of myself. I added a serving of fruit a day, which is huge for me and I upped my daily activity by 45 minutes, according to my watch!

      Jeanne, I disagree. I think that's kind of abelist. Because not everyone has the time, skills, dexterity even to make plants edible. If impossible burgers work for someone, at least they aren't consuming a life!! Every step matters. Every step counts. And none of it is a "bridge"

      Oh yes - it does feel good and maybe a little self righteous?! I dearly love following the plant-based diet closely as possible! SO much better for the planet - especially if you don't fall for the "Impossible" types of meats at the stores. They can be as destructive and unhealthy as meat/fish industries! I was not really surprised to learn this - I consider them a "bridge food" for meat addicts to try more plant based eating :)

    My eco-challenge health track is going pretty well! I've been focusing on reducing my plastic use and incorporating more fruits into my diet. I also started taking walks outside to enjoy nature while getting some exercise.

    Day 2 on the health track! I picked really attainable goals - because I’ve never been great at follow through. I’m excited because I think 5 more minutes of exercise and 1 more serving of fruit a day is something I will actually do - and hopefully continue after ecochallenge!
