Overall, I believe that the people's ecochallenge 2025 is going well. Although I have days where I don't reach my goals, I am becoming more conscientiously aware of my impact on the environment. I am also learning helpful tips from others.
  • REFLECTION QUESTION
    Simplicity
How is creativity a necessary ingredient for practicing simplicity?

Being creative is necessary because it allows me to think outside the box. (ie: using what I have on hand to make something different like adding leftovers to a dish).

Creativity is a good tool to cultivate as we strive to do more with less. Food waste is the easiest thing to eliminate entirely or reduce significantly . Learn to batch cook and freeze extra portions. Plan your menu weekly instead of "by the seat of your pants": Be creative in planning based on ingredients you already have on hand. BUT!!! - only plan meals you know you like and will eat. Prepare all the ingredients on Monday and then portion in reusable containers based on the meals you are planning for the week:

      Monday - spaghetti
      Tuesday - taco salad
Wednesday - Oriental vegetables and rice
Thursday - Grilled chicken with salad
      Friday - Chili over rice

This way you can cook all the meats ahead of time. all at once which will reduce your energy usage which is a bonus. Then just portion out what you need for each meal.

More of the positive, not the negative.
  • REFLECTION QUESTION
    Nature
Rachel Carson said that we need the beauty and mysteries of the natural world for our spiritual and emotional development. Does that ring true for you? What are the implications for a culture that spends most of its time indoors?

It definitely rings true. When you spend most days indoors you don't get to experience the beauty of nature.

Walking, especially surrounded by nature, relaxes my body and soul. When walking different trails or just around the neighborhood my senses always notice something different.
