Colleen Cunningham 10/29/2024 5:49 AMI mark down the things I want to do everyday in a notebook and keep track that way, in case I don't get a chance to check in on the computer. I have been doing very well, and even though I am only allowed to choose five things on my dashboard as dailoies, I have found myself doing more of those activities than I expected to, and I am learning a lot about the ways we can do the smallest of things and make a huge difference. -
Colleen Cunningham 10/21/2024 6:06 AMI have been doing everything, but forgetting to check in. I am trying to make things become second nature, and it is easier to move from one task to another without stopping to evaluate everything i am doing at the moment. i keep notes on what I have done and know how well I am succeeding that way. -
REFLECTION QUESTIONNature Spend Time OutsideRachel Carson said that we need the beauty and mysteries of the natural world for our spiritual and emotional development. Does that ring true for you? What are the implications for a culture that spends most of its time indoors?
Colleen Cunningham 10/21/2024 6:02 AMAbsolutely it rings true for me. I love being outdoors, especially now in the fall. I live in one of the most beautiful places on earth and every day i appreciate the beauty around me. Anyone and everyone should step outside even for a few minutes each day, just to feel connected to the universe. You don't have to talk to anyone, you do not have to be social. Just spend five minutes away from the artificial light and then electronic noise nd you will make a huge difference in your own life. -
REFLECTION QUESTIONHealth HappinessHow does/can practicing gratitude keep you centered and motivated to work for a better world?
Colleen Cunningham 10/21/2024 5:59 AMIt makes me feel like i am part of something bigger than myself, a true part of the universe -
REFLECTION QUESTIONFood Choose Organic IngredientsWhat is your perceotion of organic food? After cooking with and eating organic food, has your perception changed?
Colleen Cunningham 10/21/2024 5:58 AMMy perception of organic food is food allowed to grow naturally wityhout the use of checmicals to enhance the food or pesticides to cultivate. I prefer organic and have for a long time. I get all my eggs from a friend down the road who has chickens, and i get fruits and vegetables from farmers' markets -
REFLECTION QUESTIONFood Weekly Meal PlanningAn average American throws out about 240 lbs of food per year. The average family of four in the US spends $1,500 a year on food that they throw out. Does this surprise you? Where would you rather use this money?
Colleen Cunningham 10/21/2024 5:56 AMTo be able to pay for fun things for my family to do and to pay for things we want, not necessarily need. -
REFLECTION QUESTIONFood Zero-Waste CookingIn North America, up to 65% of food waste happens at the consumer level. Chef Steven Satterfield advocates for using every part of a vegetable. How can you incorporate using an entire vegetable (including the skins, tops, stalks, etc.) during your next meal prep?
Colleen Cunningham 10/21/2024 5:55 AMI always save the parts I cutoff, like tops, skins, etc. and put them in a freezer bag to be used for flavoring soups and stews
