The tastiest vegan meal I have had recently would be a baked tofu dish with rice that I made. It is super easy and pretty quick, but I don't have an exact recipe as you just season the tofu and pop it in your stove or air fryer. I just measure with my heart a few random seasonings and hope for the best! I also added broccoli for some greens, but you could add just about anything else!
