    I genuinely cannot believe that we have already completed a month of this EcoChallenge! At first this started as a class activity for me, but as the month went on I can proudly say staying consistent in planning weekly meals and taking the time to meditate for five minutes or more allowed me to save a significant amount of money this month that I was able to put towards other necessities (Like furnishing my new apartment) and just have those moments throughout my days where I was able to take a step back and recenter my attention on the things I see fit.

    Today for breakfast I had eggs and a hash brown, and for lunch I had a loaded baked potato with some ground turkey on top of it. It was yummy!
    Not sure what I'm having for dinner just yet.

    One way that I have been influenced and inspired by my classmates in this challenge is definitely through their openness and enthusiasm to engage with the activity. Seeing their constant effort has really motivated me to stay involved and reflect more deeply on the impact of our choices. It's inspiring to be part of a group that genuinely cares about making change together.

    I noticed that I have found myself enjoying doing my five minutes of sitting in my silence right when I wake up in the morning. No talking, no phone. Just me and my thoughts!

    I think practicing five minutes of of silence for myself is something that I am going to try and continue to add into my everyday routine, even after the EcoChallenge is over :}

    I went grocery shopping this week so my fridge is stocked up! :) I'm making Carne Asada tacos for dinner

    One small win I have had so far in this Ecochallenge is just being able to find new ways to easily contribute to being apart of the change! :) Especially in ways I didn't even fully realize at times. I think this definitely gives me a greater outlook

    Today for breakfast I had sausage and eggs, for lunch I had some leftover rice and chicken, and for dinner I am having some oxtails my mom prepared at her house and let me bring home some of. :)

    Mindfulness meditation is meaningful for me because it reminds me to focus about the now. No stressing about things that may have went wrong or what might happen. It definitely helps me bring my thoughts back to reassuring myself that "I am okay" "I am safe" "I am enough".
