    The two documentaries I watched addressed local communities, and how food insecurity can impact us unexpectedly. We hear about famine in other parts of the world, which is sad in itself... but sometimes we don't realize that one of our co-workers or that person you just passed in the street, may not have had breakfast. And truthfully, I was that person many years ago.

      I always get so much out of these Ecochallenges. And as you describe, it's not just about learning facts; it's also about the way thinking about those facts makes us feel and often motivates us to make a change in our thinking, lifestyle, and/or values.

    I think my tomatoes are done for this year and still have a lot of green ones. Someone mentioned pickling them, so I think that will be my "try a new food prep."

    I am thankful for the opportunities to learn through ecochallenge. One of my goals is to get more sleep, which has been difficult for me the past 6 months, but having this goal is helping me prioritize sleep - which impacts everyone's health more than we realize. Don't take sleep for granted!

    I added 3 raised beds this year, plus had some tomatoes in the ground. The tomatoes in the raised beds didn't do as well as the ones in the ground (which is funny because I thought the raised bed soil I used would have better nutrients). I recently planted some carrots, beets and kale in one of the raised beds because they do well in winter.
