anyone else playing catch up this week!? Whew! it's been so busy! I'm also unable to take the ecochallenge "share your why" as it is linked to a google doc, which is blocked by Voya systems.

    Community
What is one thing you can do to help your community become more sustainable?

Start local is my advice. It could be your block, your street, your village. Be inquisitive, find out who handles things within your town, mabye check with your local non profit board if you have one, or chamber of commerce. Find out what local businesses are doing for sustainability. as always, be the change you wish to see :)

    Food
How was your experience intentionally trying to eat less meat?

It has been a lot easier than I thought, especially with so many filling in season vegetable selections to choose from! It's easy to sneak protein in, if you get creative and intentionally plan meals!

I agree! Tofu, beans, nuts, eggs, tempeh and fresh autumn veggies in a wrap with avocado makes for easy whole food, vegetarian meals!

Hiking and kayaking are my favorite outdoor activities and I do them any chance I can get. It's amazing what the forest tells you when you're walking around in it! There is a whole ecosystem out there operating around us, busily carrying on their days :) I love it so much.

What makes you feel connected to your neighborhood, your neighbors, or another kind of community in your life?

    Amanda Johnson's avatar

When the world's problems feel too overwhelming I turn to my community to help make a difference in the lives of people right here in my village. I attend local events at the library, donate to the local food pantry, positively comment on the community fb page. Supporting others goes a long way :)
  • REFLECTION QUESTION
    Food
Which foods did you pickup this week? Any new recipes with fall seasonal produce?

I have been obsessed with butternut squash and the Amish farmers down the road sell them for 50 cents a piece! This week I made a Butternut Squash/Cauli/BBQ chicken one dish skillet meal. You can find it on Lillie Eats and Tells website.
Last week i was quartering it and topping it with goat cheese/cranberries/walnuts and balsamic.

How did exercising each day impact your physical or mental well-being? What activity did you enjoy most, and why?

    Amanda Johnson's avatar
    Amanda Johnson 10/30/2025 1:22 PM
Exercise is the best mental health therapy I can give to myself! I've been soaking up hiking and kayaking all that I can, as we are nearing the winter season where I live. Hiking is my most preferred method of exercise in the summer/fall months. If I'm not hiking you can catch me kayaking or walking.

I have a lot of catching up to do as I was on PTO! We spent 7 days in Acadia National Park where we hiked every day, visited museums, nature centers, and visitors centers! Our National Parks provide several resources for education and inspiration.

I am really wanting to build a community garden space for flowers and pollinators, I'm working on teaming up with a couple of local community members that are experts in this area, specifically the local beekeepers! By building an environment for the pollinators, the entire community can benefit!

You might check to see if there is a local native plant society *or* Wild Ones chapter in your area. You'll find a lot of additional people who share your interest, and who often are happy to donate time and plants native to your area.

How is planting trees good for your mental, physical, and spiritual health?

    Amanda Johnson's avatar

I didn't get a tree planted outside; however, I worked on my indoor plant space and planted some of my seedlings into their forever pots.
