Eric's actions
Health
Enjoy Fruits and Veggies
Adding fruits and vegetables to our meals nourishes our body and the planet. I will prepare and enjoy 2 servings of a variety of colorful fruits and veggies.
Share My Why
Share My Why
I will share my Ecochallenge story and why I'm taking action for the planet — and earn 15 points!
Share My Why
Take the People's Ecochallenge Feedback Survey
I will take a short survey about my experience to help the Ecochallenge team improve future events, earn a chance to win a prize, and earn 15 points!
Take the Pre-Survey
Take the Pre-Event Survey
I’ll take a short pre-survey to share what motivated me to join — and earn 15 points! (If I already took the survey by email, I’ll just mark this action complete to get my points.)
Food
Plan Meals for the Week
I will reduce food waste and save money by prepping for 2 meal(s) each day, only buying the ingredients I need.
Health
Reduce Refined Sugar
Cutting back on refined sugar can improve energy, mood, and overall health. I will limit my intake of sugary snacks and drinks by reducing refined sugar in meals or snacks each day.
Community
Volunteer in My Community
I will volunteer 6 hours in my community during the challenge.
Energy
Use an Energy Meter to Monitor My Use
I will use an energy meter to monitor my energy use and identify opportunities to save power.
Water
Understand My Water Footprint
Each of us has a water footprint, directly linked to our daily activities as well as the water required in the production of things we use each day. Understanding our water use is important for a healthy planet. I will calculate my water footprint and look for a few ways I can reduce consumption or waste, then share what I learned on the feed.
Energy
Choose Clean or Renewable Energy
I will sign up for my utility company's clean/renewable energy option.
Waste
Complete a Personal Waste Audit
I will collect all of my unrecyclable, non-compostable trash to raise my awareness of how much I send to the landfill. I will share a photo and reflection of this action on the feed.
Nature
Learn How to Save the Bees
At least 30% of crops and 90% of flowering plants rely on pollinators to produce fruit. I will spend 20 minutes researching which plants support local native pollinators and plant some in my yard.
Simplicity
Reflect on My Needs Versus Wants
I will adopt a "Needs Vs. Wants" approach and only buy things I need.
Food
Follow a Whole Food Diet
Processed foods can be less nutritious for our bodies and take more energy and water to produce, which can create more waste, pollution, and may offer fewer health benefits. I will enjoy 2 meals per day free of processed foods.
Nature
Explore a New Trail or Nature Walk
I will explore at least one new hiking trail or nature walk in my area.

REFLECTION QUESTIONWaterWhat surprised you most about your water footprint, and how did it influence your perspective on water use? What changes can you make to reduce your water consumption, and how will these impact your daily routine?
Eric Leatham 10/31/2025 8:33 AMWas actually better than I thought it would be. Most of our usage is not inside the home but things we buy and eat, plus how we get around. -
REFLECTION QUESTIONNatureHow can spending more time outdoors enhance your sense of place -- your deep knowledge of and appreciation for your surroundings?
Eric Leatham 10/31/2025 8:33 AMIt's a different experience when you walk or bike even if you've been to the area before. You see new things and focus on different areas.-
Eric Leatham 10/31/2025 9:29 AMYes, hills are much more noticeable. Also how bad the pavement can be - cracks and holes that you don't notice in the car. -
Janet Beach 10/31/2025 8:47 AMI notice the hills. When I drive a little hill is nothing. When I walk or bike that long uphill is a killer!

REFLECTION QUESTIONEnergyHow might you be able to get others involved in advocating for the shift to clean energy?
Eric Leatham 10/31/2025 8:32 AMTalk about it more with family and friends. Our utility does not offer much so I made sure to point that out to them that it's wanted and needed. -
REFLECTION QUESTIONSimplicityHow is creativity a necessary ingredient for practicing simplicity?
Eric Leatham 10/31/2025 8:31 AMHave to be creative and work with what you already might have or can get for free. -
REFLECTION QUESTIONHealthBefore you started this challenge, did you think you were 'addicted' to sugar? How do you feel now? What was the most challenging part of reducing refined sugar, and how did you overcome it?
Eric Leatham 10/29/2025 2:34 PMYes, very much addicted to sugar. It's hard to find anything in the store that doesn't have a bunch of added sugar. New me is making my own stuff now figuring that if I make banana bread for instance, it has to be healthier than anything like it purchased at the store. Plus I know exactly what's in it. Sure it has some sugar but also banana, nuts, etc.-
Therese Herzog 10/29/2025 3:01 PM- Community Builder 🤝
True, there is so much hidden added sugar in our foods. It is easy to be addicted. Making meals at home gives us back control of what we eat.

REFLECTION QUESTIONHealthHow does eating more fruits and vegetables and less meat positively affect yourself, other people, and our planet? What fruits or vegetables did you try this week, and which was your favorite?
Eric Leatham 10/29/2025 2:32 PMJicama was relatively new for me and I like it. Rest were the usual ones - banana, plum, grapes, raspberries, salad and clementines. -
REFLECTION QUESTIONFoodMichael Pollan states that “it is better to pay the grocer (our edit: or the farmer!) than the doctor.” What are your thoughts on this assertion?
Eric Leatham 10/29/2025 2:31 PMIt's so much easier to eat healthy now than to rely on medicine in the future. -
REFLECTION QUESTIONWasteWhy is it often difficult to understand the impacts our purchases and waste have on other people, animals, and places?
Eric Leatham 10/29/2025 2:30 PMWe don't know all of the impacts plus it's time consuming to think purchases all the way through the lifecycle. -
REFLECTION QUESTIONFoodAn average American throws out about 240 lbs of food per year. The average family of four in the US spends $1,500 a year on food that they throw out. Does this surprise you? Where else would you rather invest this money instead of wasting food?
Eric Leatham 10/28/2025 4:37 PMThe amount of food wasted shouldn't be a surprise as it does seem fairly common. It's hard to eat more fruit and vegetables and keep them from going to waste at the same time but I have a pretty good system in place now. -
Eric Leatham 10/28/2025 4:34 PM2025 Ecochallenge is going great. Kind of a slow start for me to get used to the new items but now just a part of my day.
