  • REFLECTION QUESTION
    Food
In North America, up to 65% of food waste happens at the consumer level. Chef Steven Satterfield advocates for using every part of a vegetable. How can you incorporate using an entire vegetable (including the skins, tops, stalks, etc.) during your next meal prep?

That is a great idea! I've never thought about using scraps to make broth, but it'd be perfect since I love drinking broth! Thank you for sharing

I read recommendations to keep a bag (like a gallon ziplock) in the freezer and add to it until there's enough to make a broth. That means it doesn't become a decomposing mess in the meantime. That idea might push me into trying to save more vegetable scraps.
