REFLECTION QUESTIONFoodCanning and pickling food is a great way to have delicious summer fruits and vegetables all year round. Just make sure to follow the canning and pickling guidelines from the USDA or another trusted source. What are some foods that you would like to preserve and enjoy later in the year?
Gillian Schneider 10/28/2025 6:10 PMI don't pickle or can, but I do make use of aging bananas. I got 27 from the Half Marathon and made some of the best banana bread I have ever made. Turns out pecans and blueberries pair so nicely. -
REFLECTION QUESTIONFoodWhat is one food choice that you make, or could make, that would do more good and less harm?
Gillian Schneider 10/28/2025 6:08 PMThough I did not make it to a farmers' market this October, I visited the Wheaton market more this summer than I have in most of the last decade. I could always eat more vegetables, and I have taken a liking to cauliflower the last four years. I prefer the farmers' market version that is never wrapped in plastic. -

Gillian Schneider 10/26/2025 6:24 PMWe do not have to look far in the world to see the destruction of Gaza and Ukraine. I cannot imagine the path to rebuilding and how tenuous the peace in those areas will be for some time to come. And those with money will rebuild bigger and better. And those less fortunate will struggle to rebuild at all. So many challenges. -

Kerry Keck 10/27/2025 10:26 AMIn defense of cattle as a species, I am studying about restoration of coastal prairies. Large herbivores, bison, used to roam the prairies from the Gulf Coast north to Canada, and were key factors in maintaining prairies. Lacking large herds of bison, land managers are using cattle as substitutes as they try to restore these areas as much as possible to their original state.

Gillian Schneider 10/15/2025 5:11 AMWe are almost halfway through, and this month has gone by so fast. The weather is unusual for Chicagoland, but I am so appreciative to have more opportunities to explore outside without a heavy coat. But this also reminds me to monitor climate change, especially in those areas where underserved populations cannot afford to go elsewhere and are often dealing with more adverse weather, hurricanes, flash floods, tornadoes. Even our area has been affected with more volatile weather in the summer months. So we do what we can, and part of that for me is committing to EcoChallenge. -
REFLECTION QUESTIONNatureHow can spending more time outdoors enhance your sense of place -- your deep knowledge of and appreciation for your surroundings?
Gillian Schneider 10/15/2025 5:08 AMI could smell the skunk, see the possum, and hear the crickets, cicadas, and other nocturnal noises. My kid and I camped out with our black house cat in a neighbor's half acre backyard. She has been so kind to us, so the combination of her compassion and willingness to let us explore her backyard have given me hope and a better sense of community. Thanks to Jean K! -
REFLECTION QUESTIONNatureWhat did you observe while spending time outside -- through sight, sound, smell and/or touch?
Gillian Schneider 10/15/2025 5:04 AMI know not many will read this, so I'd like to confess that my house cat escaped 4 months ago. On Saturday I posted on NextDoor asking for help, and a woman had my Po on video camera in her backyard--2 miles from my house. So I spent two hours last night and two hours another night camped out in her backyard. A black cat (not Po) walked right by without noticing me. A baby possum came out three times, and an adult possum also came out to visit. The cool air, the breeze through the trees, and the consistent night noise made it relaxing, even though my Po never came by. I'll be back... but cannot talk about it in person without getting choked up. But keep wishing Po good thoughts. Fingers crossed he comes to visit me one of these nights.-

REFLECTION QUESTIONNatureHow do pollinators impact your daily life, and what changes can you make to ensure they continue to thrive?
Gillian Schneider 10/14/2025 1:57 PMAs I researched this for a potential NVeco grant, I understand the value of bees more and more. I do not think elementary school students know the value and necessity of bees, but we will incorporate the cycle of bees to continue our ecosystem and keep us alive and healthy. I need to be careful of lawn care. That is one of my main weaknesses. However, I do have many plants for the bees, which have grown/expanded immensely from their pollination. -
REFLECTION QUESTIONHealthWhat single-use items (e.g. straws, coffee cups, vegetable bags, plastic bags) do you regularly use? What could be substituted instead?
Gillian Schneider 10/14/2025 1:54 PMI try to be so good about those. So I don't use straws, coffee cups, vegetable bags, or plastic bags. I took canvas bags (and a reused plastic bag from someone else) to the store to shop. Though I ended up with one plastic cup and straw (without options), I brought it home and rinsed it out to reuse--so it will not be single-use. I also reused plastic containers when I went out to eat this weekend, saving 4 containers that otherwise could have been single-use.-

Gillian Schneider 10/14/2025 1:52 PMThis has come up so much lately. There is a class debating who should own America's water. And this is so vital to those underserved communities, as there are land and water rights grabs by companies that recognize (much like the movie Rango) the control they will have if they control places and water access. Such challenging topics!
