    Broccoli stir-fry. I make it from scratch using tofu, blanched broccoli, shredded carrot, sesame seeds, sesame oil, soy sauce and peanut butter. sometimes I'll also use water chestnuts and toasted cashews. I also add a protein powder to coat the tofu before baking. It's a hearty and filling meal providing much fiber and protein.

    As you transition from throwing food away to composting, what do you notice about how much you are tossing? How will you use your compost once it is ready?

    I have acquired a composting bin and done research on how to properly compost. Once I have created enough compost I intend to use it in my garden next year to grow my own vegetables.
