    I would like to plant more trees and save up to buy an electric car. One thing I do practice is eating vegan meals, not all my meals are vegan but I have a least one vegan meal a day.

    I feel that my consumption of social media can effect my mood. I don't walk away from social media feeling great but when I am able to find other ways to spend my time like reading a book or journaling I do walk away feeling better and like I nourished a better mood.

    What was the tastiest meatless or vegan meal you ever had or had recently? Did you make it? Can you share a recipe?

    I recently made vegan empanadas for a potluck :) . I also love pasta and enjoy making vegan gnocchi. 

    Pasta
    4 russet potatoes
    3 tablespoons of olive oil (instead of egg)
    1.5 cups of water
    Salt and pepper to taste

    Pan fry gnocci with vegan butter, 1 shallot,  italian seasonings, sage & pecans.

    We might feel less connected to nature if we don't ever enjoy the outdoors and less inclined to notice how important it is to protect not only the environment but the wildlife that live in it.

    As you transition from throwing food away to composting, what do you notice about how much you are tossing? How will you use your compost once it is ready?

    I'm realizing how much more waste goes to the landfills if we don't compost. I live in Vancouver WA and we have a great program where they collect the yard debris and food scraps and take them to West Vancouver Materials Recovery Facility where it is reloaded and trucked to Dirt Hugger, a commercial composting facility.
