Kenedy's actions
Nourishing Food
Research the Benefits of Agricultural Biodiversity
I will spend 15 minutes each day researching how agricultural biodiversity positively impacts the food I eat.
Nourishing Food
Eat Plant-Based Meals
I will enjoy 1 meatless meal(s) and/or 1 vegan meal(s) each day this week.
Regenerating Nature
Support Local Pollinators
At least 30% of crops and 90% of flowering plants rely on pollinators to produce fruit. I will spend 20 minutes researching which plants support local pollinators and plant a few in my area.
Regenerating Nature
Complete an Energy Audit
I will complete an online energy audit of my home, work, or other shared space to identify the next steps for saving energy.
Regenerating Nature
Use Resources for Climate Anxiety
I will spend 15 minutes each day trying out climate anxiety resources that support mental and psychological well being.
Nourishing Food
Make Zero-Waste Meals
I will cook 1 meal(s) with zero-waste each day.
Balancing Consumption
Know My Waste & Recycling Services
I will spend 30 minutes finding out how to recycle in my region, where landfills and/or waste sites are situated in my region, and which communities are most impacted by these sites.
Balancing Consumption
Personal Waste Audit
Each day, I will collect, track, or take a picture of all of my unrecyclable, non-compostable trash to know how much I send to the landfill.

REFLECTION QUESTIONNourishing Food Research the Benefits of Agricultural BiodiversityWhat are the benefits of agricultural biodiversity and how do you see this connecting to overall biodiversity?
Kenedy Witherow 10/25/2022 2:05 PMThe benefits of agricultural diversity are very important to the local environment. Some of the benefits include supporting pollinators, reducing the carbon footprint (focus on planting more native plants and crops whose seeds don't travel hundreds of miles), and water and energy savings as many native, diverse plants do not require excess amounts of water, pesticides and fertilizers -
REFLECTION QUESTIONNourishing Food Eat Plant-Based MealsWhat was the tastiest meatless or vegan meal you ever had or had recently? Did you make it? Can you share a recipe?
Kenedy Witherow 10/20/2022 8:29 PMWhile traveling for work in Minnesota I had the best meatless meal I can recall - it was a burrata ravioli! The ravioli had poppyseeds inside the pasta, and burrata mozzarella on the inside. The sauce was a light olive oil sauce with pine nuts and pickled rhubarb. It was amazing! -
REFLECTION QUESTIONNourishing Food Make Zero-Waste MealsHow did you incorporate using an entire vegetable (skins, peels, tops, and stalks) during one of your meal preps? What's something new you're going to try that is a zero-waste meal practice?
Kenedy Witherow 10/19/2022 8:17 PMI used an entire cabbage and the head (only part that I didn't eat myself) was eaten by my pet shrimp and snails in my fish tank! -
Kenedy Witherow 10/19/2022 8:16 PMThe ecochallenge is going well but I wish I had more time to dedicate to learning about the highlighted concepts and materials.-
Rita Haider 10/20/2022 7:33 PMI agree with you. The People's Ecochallenge gives us so many great resources, I too wish I had time to learn more from this knowledge base.

Kenedy Witherow 10/19/2022 8:16 PMI made Baked Ziti on Tuesday with ingredients in my kitchen from the previous night's dinner, and pasta from the pantry. The pasta was the only ingredient that generated waste (the bag). I used tomatoes from my garden, unpackaged cabbage, garlic, and onions, and parmesan cheese to make an easy baked ziti that we loved!-
Rita Haider 10/20/2022 7:32 PMI take a lot of the plastic bags to Giant Eagle. They have a huge collection box outside the store and it takes more than just the plastic grocery bags. So I save all my plastic bags from the various items that get wrapped in plastic and take them there. I would rather not have so many items wrapped in plastic, but I guess this is the next best thing.
