    Nourishing Food Research the Benefits of Agricultural Biodiversity
    What are the benefits of agricultural biodiversity and how do you see this connecting to overall biodiversity?

    The benefits of agricultural diversity are very important to the local environment. Some of the benefits include supporting pollinators, reducing the carbon footprint (focus on planting more native plants and crops whose seeds don't travel hundreds of miles), and water and energy savings as many native, diverse plants do not require excess amounts of water, pesticides and fertilizers

    I assisted with rescuing food today from Giant Eagle. We reused banana boxes to place the donated baked goods totally 11 banana boxes that were stuffed and 3 bags. The car was stuffed full, trunk, back seat, floor and passenger seat. So happy to keep food out of the landfill and given to those in need.

    Nourishing Food Eat Plant-Based Meals
    What was the tastiest meatless or vegan meal you ever had or had recently? Did you make it? Can you share a recipe?

    While traveling for work in Minnesota I had the best meatless meal I can recall - it was a burrata ravioli! The ravioli had poppyseeds inside the pasta, and burrata mozzarella on the inside. The sauce was a light olive oil sauce with pine nuts and pickled rhubarb. It was amazing!

    Regenerating Nature Spend Time Outside
    What are the implications for a culture that spends most of its time inside and on screens?

    There are a lot of negative health consequences to spending so much time indoors and on screens. Decreased physical activity usually means increased weight, as some say.......sitting is the new smoking!  Staring at the screen for long periods of time can cause “computer vision syndrome” with symptoms of strained eyes, blurred vision, dry eyes and headaches. All that exposure to blue light can decrease sleep quality.  I also believe that being outside makes me more interested in my natural environment and I have a desire to learn more.  Mentally I feel better after being outside.

    Nourishing Food Make Zero-Waste Meals
    How did you incorporate using an entire vegetable (skins, peels, tops, and stalks) during one of your meal preps? What's something new you're going to try that is a zero-waste meal practice?

    I used an entire cabbage and the head (only part that I didn't eat myself) was eaten by my pet shrimp and snails in my fish tank!

    The ecochallenge is going well but I wish I had more time to dedicate to learning about the highlighted concepts and materials.

      I agree with you. The People's Ecochallenge gives us so many great resources, I too wish I had time to learn more from this knowledge base.

    I made Baked Ziti on Tuesday with ingredients in my kitchen from the previous night's dinner, and pasta from the pantry. The pasta was the only ingredient that generated waste (the bag). I used tomatoes from my garden, unpackaged cabbage, garlic, and onions, and parmesan cheese to make an easy baked ziti that we loved!

      I take a lot of the plastic bags to Giant Eagle. They have a huge collection box outside the store and it takes more than just the plastic grocery bags. So I save all my plastic bags from the various items that get wrapped in plastic and take them there.  I would rather not have so many items wrapped in plastic, but I guess this is the next best thing.

    Today was a failed People's Ecochallenge day, but I am hoping for better results tomorrow.

    I rescued food today from Lion Cub's Cookies, check out the photos. I took a friend with me and have now recruited another volunteer for Food Rescue-Columbus. Food that was kept out of the landfill and cheered up some folks in need. What a great day!
